Italian Porcupine Meat Balls
Ingredients and Equipment
- Pressure Cooker
- 1 lb. lean ground beef
- ½ cup rice
- 1 tsp. salt
- ½ tsp. pepper
- 1 small can tomato soup concentrate
- ¾ cup water
- 1 tsp. oregano, freshly ground by hand
Cooking Instructions
- Place water and tomato concentrate in open pressure cooker with a very low heat
- Blend beef, rice, salt, pepper, and oregano in large bowl using bare hands
- Form blended ingredients into meatballs about ¾ to 1 inch in diameter
- Place meatballs into pressure cooker, cover, and turn to high heat
- Place small cover on vent when steam stream is solid
- Heat at full heat (small cover is dancing or shows three lines) for 10 minutes (12 and 15 for double and triple recipe)
- Shut off stove and allow to cool for about 20 minutes
- Porcupine meat balls are ready to serve!
